On the 16th March we carried out the unannounced audit of our food safety Certification FSSC22000 (standard recognized  by GFSI). This audit was carried out by AENOR (Spanish Association for Standardization and Certification) which was concluded successfully. At JULIAN SOLER we support unannounced audits as guarantee for continuous imrpovement a job well done.

Most red grapes varieties possess the colour only in its skin. On the inside they have a yellowish pulp with which red must of mild colour is derived, that must be macerated.  However, the Garnacha Tintorera variety is special variety due to the fact that it has an intense coloured pulp. This variety of grape is grown in our wine region La Manchuela, which allows us to obtain high colour intensity Red Grape Juice Concentrates.

At JULIAN SOLER we have been using clean and renewable energy for over 20 years in our production process.
We use biomass to fuel our boilers and we have a photovoltaic installation in place to generate solar energy, protecting the environment from polluting emissions.

The Rectified Concentrated Grape Must is a grape juice which has had all components eliminated except for its own grape sugars (glucose and fructose). This product is pure grape sugar. It contains glucose and fructose in equal proportions and it does not contain sucrose. It is a colourless product, neutral and very stable with a concentration of 65 Brix.

53 years of experience gap between both images.

The black and white image is of our first grape juice factory. It shows the construction of the first hopper to receive fresh grapes.

It is a myth that sugars in grape juice are bad for children. One small glass of 100% grape juice contains 15 g of natural sugars, but also provides vitamins and minerals, making it a useful addition to the diet. The sugars in are naturally present in the fruit, not added sugars. 100% grape juice contains all the vitamins and minerals found in the whole grapes used to make it.

Last week, the Certification process of our Organic Grape Juice Concentrate was carried out by CAAE (Certification body specialising in organic production). Our Organic Grape Juice Concentrate is elaborated exclusively from Spanish organic grapes, completely free from pesticide residues. In Winter the vine remains in lethargy and vegetative rest and this is the ideal period to carry out this task. The goal of Pruning is to reduce the amount and the length of the cane in order for the vine to produce less bunches, but in turn they will be of a higher quality. Pruning prolongs the life of the vine and guarantees grape harvest from year to year.

The snow we got last week brought multiple benefits to our vineyard:
- The snow acts as a powerful disinfectant, cleaning the vine.
- It supplies a generous intake of water as the earth absorbs the water in a uniform manner.
- It delays the budding period of the vine, hence, reducing the risk of frost.
- The land is less likely to suffer erosion caused by heavy rain and hail.

Following the snowfall, the plant will revive in spring.

The “twelve grapes” (”doce uvas”) is a Spanish tradition which consists of eating twelve grapes in the exact moment that the 31st ends and the new year begins, the 1st of January. The twelve grapes symbolise the twelve months of the year. They ought to be eaten individually at each stroke of the clock. Following this tradition guarantees good luck in the coming new year. The origin goes back to the end of the XIX century. A period in which Spanish Royal families influenced by their French equivalent, had the tradition of bidding farewell to the year with champagne and grapes. This elitist nature disappeared when some of the less well-off social classes decided to take it up as their own and turned up at the Puerta del Sol in Madrid to carry out the ritual. Since then, the twelve grapes have been popularised until it became a Spanish tradition in every home.

Raisins are dried grapes.The sweetest variety of grapes and those which contain less seeds are chosen to be desiccated. Within Spain they are produced mainly in the province of Málaga, where they still currently perserve the traditional process of drying. This unique process consists of sun drying ripe grapes of the Moscatel variety. The bunches are arranged carefully on sloping surfaces called paseros (grape dryers). Once dried, the bunches can be deseeded by hand or mechanically. Rasins have a high nutritional supply, seen as they are rich in carbohydrate content, potassium and fibre.
